Grilled peaches

It was my birthday a few days past and I wanted all things grilled. I had grilled steak and grilled peaches. The peaches were yummy so I definitely wanted to pass on the recipe.

I cut slices around the peach so that by the time I was done, I had four-five slices. Please see below.

In a bowl, I mixed two tablespoons of strawberry balsamic vinaigrette and 3 tablespoons of brown sugar. I poured it over the peaches and made sure that all the peaches were fully coated.

I heated a grill pan with coconut oil and placed the peaches on the grill (non skin side down). Grill this side for 3-4 minutes and then flip.

Grill the other side for 3 minutes and plate. Garnish with  a little vanilla ice cream, crushed mint, and drizzle with a touch of maple syrup.

I sure hope heaven has those kind of articles.

Can you eat this every day? No. Can you add it to your list of comfort foods?  YES. The best thing about it, is that it takes less than 15 minutes. Fast comfort food? I’ll take it!

I paired it with a turkey burger but you could easily eat it by itself. You could also  put it on top of a salad when you want to impress your ‘ladies that lunch’ group.

Fried Goat Cheese Turkey Burger

What you need:

Small or large log of goat cheese

1 egg

3/4 cup of panko crumbs (regular or gluten free – both work great)

1lb of ground turkey

1 tsp of salt

1 tsp of pepper

1 avocado; sliced

1 tomato; sliced

1 white onion; sliced

Directions for the goat cheese:

Cut the log of goat cheese into 1/4 inch slices. Place 3 tablespoons of oil and heat it up in a medium size sauce pan. Take a slice of goat cheese and form a ball with it so that it stays together when you place it in the egg. I flattened the ball a little bit so that it looked like a pancake. Place the goat cheese in the egg and make sure egg covers the outside. Follow that with placing it in a bowl with 1/2 of the panko crumbs and gently toss it around so that it’s completely covered. Emphasis on the word gentle!

Test the oil to make sure it is hot. I usually throw a drop of water into it. If it sizzles, you’re good to go!

Place the balls into the oil and do a minute and 30 seconds on each side; until each side is lightly browned.

Take them out and place them on a paper towel. Pat them with the paper towel to take out the excess oil.

Dispose of the used cooking oil.

Directions for the turkey burger:

In a bowl, mix the turkey meat, 1/4 cup of panko crumbs, and the salt and pepper. Knead it with your hands until you feel that it is mixed. 1 pound of turkey meat makes about 4 patties so divide the meat into four equal portions.  Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb.

Add 1 tablespoon of oil to the pan that you used for the goat cheese, and turn the burner on medium to high heat. Cook the turkey burgers until golden brown on each side; roughly 5 minutes per side. During the last minute on the second side, I placed the fried goat cheese on top of the burgers to warm them up.

I toasted Udi’s gluten free toast and spread some olive oil mayonnaise and mustard on each side. Tomato’s are in season and they are delicious! Place one slice on your bread. Follow that with a slice of onion and a couple of slices of avocado. Combine that with your turkey burger and the fried goat cheese, and what you have is the best comfort food burger for summer!
