It was my birthday a few days past and I wanted all things grilled. I had grilled steak and grilled peaches. The peaches were yummy so I definitely wanted to pass on the recipe.
I cut slices around the peach so that by the time I was done, I had four-five slices. Please see below.
In a bowl, I mixed two tablespoons of strawberry balsamic vinaigrette and 3 tablespoons of brown sugar. I poured it over the peaches and made sure that all the peaches were fully coated.
I heated a grill pan with coconut oil and placed the peaches on the grill (non skin side down). Grill this side for 3-4 minutes and then flip.
Grill the other side for 3 minutes and plate. Garnish with a little vanilla ice cream, crushed mint, and drizzle with a touch of maple syrup.
