Egg nested in hash browns


Sunday was made for brunching! I love brunch. I love brunch food. I love brunch food for breakfast, lunch, and/or dinner. These nests are super easy, super delicious, and an excellent go-to when you invite your closest girlfriends over for Sunday drinks and eats. There are so many variations you can make but this Sunday I just did a standard egg and cheese.



15 oz. frozen shredded hash browns, thawed

1 cup Sharp Cheddar cheese, shredded

1 tablespoon olive oil

12 medium eggs

Salt and pepper

1 tablespoon of Cheddar to top

1/2 tablespoon of parsley, (dry or fresh)

1 avocado


Mix hash browns, salt, pepper, olive oil and 1 cup of cheddar cheese in a mixing bowl

Grease the muffin pan and divide hash brown mixture. Use your fingers to make the nests and make sure potato covers the bottom.


Bake at 425 degrees for 15 minutes. Hash browns will be browned on the edge.


Crack a medium egg into each nest and season with a pinch of salt, pepper, and parsley. Top with a sprinkle of shredded cheddar.


Bake at 350 degrees F for 13 minutes. Egg whites should look set.


Gently slide a knife along the edge (carefully, my first one was a casualty) and lift them out with a fork. (KEY)

Plate and top with a spoonful of pico de gallo and a couple slices of avocado. YUM.


The egg will be poached so make sure that your guests like their eggs runny. Pair it with a nice mimosa and your guests will be raring to come back!

Other variations:

Adding bacon, prosciutto, or ground sausage

Sweet potato hash brown nests with sugar-cinnamon apples topped with marshmallows. Mmmmm Thanksgiving ideas!
