This woman, my momma, makes a killer marinara. This same woman, Texas born and bred, never had spaghetti sauce until her early 20’s. You would never know! Besides being an intelligent, caring, and hilariously entertaining lady, she means business when she’s in the kitchen.
Without further ado, onto the recipe…
THE BEST MARINARA
Serves 2 * Prep time 10 minutes * Cook time 2 hours * Pair with a nice red
1 large can plum tomatoes
½ can tomato paste
1 onion chopped
1 small box sliced baby bella mushrooms
½ lb. ground beef
1 lb. pkg. mild Italian chicken sausages, thawed and sliced 1/4″ thick
1 tbsp. olive oil
2 cloves of garlic, thinly sliced
1 tsp red pepper flakes
2 tsp. oregano
7 basil leaves or 1 tsp. dried basil
Salt & Pepper to taste
1/4 cup of fresh Parmesan, graded
In a large sauce pan, heat the olive oil. Once hot, add the garlic and let it heat up for roughly 30 seconds to 1 minute. In the same sauce pan, sear the ground beef for 2-3 minutes.
Add in the sausages, onions, mushrooms, tomatoes, tomato paste, and spices. Bring to a slight boil.
Simmer on low for 2 hours.
Serve over boiled pasta and top with Parmesan.
Somewhere in the heavens, my Sicilian Grammy is hollering with joy.
The next day, take the leftover sauce and make pizza.
She’s passed down her love for gold shoes. I can only hope that she passes down her impeccable skills in the kitchen.
I hope you’re enjoying your Sunday.
