Shrimp Scampi Zucchini Noodle Dish

Guys! I’m in heaven. As part of my New Years Resolution (ehemm…), I wanted to challenge myself in the kitchen. I’m off to a great start because these zucchini noodles (or zoodle as a dear follower called them – love that) are drool worthy! My only qualm is why I waited so long to try them.

Anyways, here starts my 2015 #somebodywifemeup series and I hope you enjoy.

Shrimp Scampi Zucchini Noodle Dish

Serving Size: 3-4

Ingredients:

4 zucchinis (mandolin sliced)

1/2 cup of chopped scallions

2 chopped plum tomatoes

1 bag of cooked and devained shrimp

1/2 lemon

Sea salt and pepper to taste

2 tbsp. olive oil

1/2 cup of graded parmesean

Directions:

Wash zucchini, cut off ends, and mandolin them up to your hearts content. Be careful, mandolin’s be sharp!

In a large sauce pan, heat up 1 tbsp of olive oil at medium to high heat. Add in the shrimp and season with sea salt and pepper. If you like it hot (and some like it hot…get it?), add red pepper flakes.

After 3 minutes, add in your tomotoes and scallions. My house can’t have garlic (shame, head hangs low) but this would be a good time to add that in (1-2 cloves sliced).

Cook for another minute or until the shrimp is cooked through. Set aside

In a medium size sauce pan, heat up the remaining olive oil and add in your zucchini. Squeeze in the lemon and season with sea salt and pepper. Cook for 3 minutes.

Once cooked, pour the zucchini noodles into the pan with the shrimp and mix it in. Serve immediately and sprinkle with parmesean. Pair it with a nice Pinot Grigio. It’s five o’clock somewhere, #amIright?

Don’t be alarmed if after making this dish you feel like you’re Giada and could rule at Iron Chef America.

    YES!!!! Aren’t zoodles a game changer!?!? My world has been rocked. And THIS sounds yummy! Try a splash of white wine in with the shrimp and then pour yourself a glass 🙂
    Have I mentioned you’re inspiring. I’m not kidding, each time I read an entry I’m motivated to do something around the house/kitchen. You’re keeping me on top of my game, Warren!
