Stuffed Spaghetti Squash fever

Stuffed spaghetti squash is my new favorite dish. Period.

I admit it. I have a spaghetti squash obsession. Mainly for the reasons that it allows me to feel like I’m eating spaghetti but a ‘good for you’ version. YES. WINNING. FEELING ALIVE.

The best part about stuffed spaghetti squash is that you can make any version you like. I decided to make a sausage and peppers version and it turned out delish.

Here’s how it goes…


1 Spaghetti Squash

1 roll of Lean Turkey Breakfast Sausage by Jenni-O

1 green pepper

1 raw onion

1/2 cup of oyster mushrooms

1 1/4 cup of your favorite spaghetti sauce

1/4 cup of mozzarella cheese

1 tsp of red pepper flakes (if you like it with a little kick)

Salt and pepper to taste


  1. Preheat oven to 35o degrees. Place whole spaghetti squash in microwave for 5 minutes. This makes it easier to cut in half.
  2. Cut spaghetti squash in half, place on baking sheet and brush insides with olive oil. Bake for an hour until slightly browned on top. Spaghetti squash 1
  3. While the squash is baking, spray skillet with nonstick cooking spray and preheat to medium high. Add turkey sausage to skillet and stir to crumble; approximately 14-16 minutes. Place sausage in bowl on side.
  4. In same skillet, add a little olive oil and sautee green pepper slices and oyster mushrooms until lightly browned; approximately 5 minutes
  5. Chop up raw onion into thin slices. Add onion, mushroom, peppers, and sauce to the bowl with your cooked sausage. Mix well. Salt and pepper to taste. Sausage and peppers mix
  6. Bring squash out and flake each halve with a fork to loosen up the squash. Add sauce mixture on top of each halve. Spaghetti Squash 2
  7. Top with the best part: CHEESE. Spaghetti Squash 3
  8. Place back in oven and broil on high for 10-15 minutes until brown and gooey and awesome and yummy. Spaghetti Squash 4
  9. Depending on the size of the squash, 1/4 seems to be a good serving size and then you have good leftovers. Spaghetti Squash 5

Bon appétit!

Stuffed spaghetti squash pairs well with a glass of Pinot Noir, cozy socks and dinner on the couch kind of a night, a cold winter’s day (finally), binging on The Great British Baking Show (anyone else??), or an easy night meal with your boo.

It only feels natural that my first blog post of the new year should include sequins; J.Crew inspired.

I loved these J.Crew sequin pants but they were all out of my size. So I thought to myself “you’re a handy gal, you can do this.” SO, without further ado, here is how I turned my reqular old pants into FANCY pants…


Go to Joann Fabrics and buy two rolls of stretch sequin ribbon

Take an old pair of ‘drapey’ pants like these above

Turn the pants on their side. Lay flat. Curl the edge of the sequin ribbon 1/4 inch and pin with quilt pin directly onto the pants.

Continue to pin the sequin ribbon all the way down until you get to the bottom seam. Curl the edge of the sequin ribbon 1/4 inch and pin with quilt pin.

I hand sewed from the top to bottom. I started with a straight line across to secure the ribbon and then I continued down the pant leg in a zig zag pattern. I finished by sewing a straight line at the bottom. The trick is to not sew through the sequins themselves.

Repeat the same instructions on the other pant leg.

And then spend your Saturday night drinking champagne, dancing on tables, and taking sequins wherever you go…

Or grabbing brunch on Sunday with your best gals in a chambray shirt and loafers.

Or sprinkling date night with a low cut silk top and a kitten heel and a leather jacket.

Possibilities are endless!

How do you style your Christmas?


A risotto to remember…

Everyone. I have tried my first hand at risotto. AND I HAVE WON! Victory is mine. Beyoncé’s Who Run’s The World rings in my head. It’s a Christmas miracle. HAPPY HOLIDAYS TO ANYONE AT THIS TABLE. RIGHT NOW.

Do not be surprised if you feel exactly like I do after finishing this meal.

What you will need:

1 1/2 cups of Arborio rice

3 cups of vegetable broth

1 tablespoon of olive oil

1 cup of oyster mushrooms, sauteed

1/2 cup of chopped onion

1 teaspoon of onion powder

1 diced garlic clove

1 teaspoon of parsley

Pepper and sea salt to taste

How to make the magic happen:

Heat olive oil in a medium skillet on Medium-High heat. Toss in garlic, chopped onion, and mushrooms. Skillet it up for roughly 2 minutes.

Add Arborio rice and the remaining ingredients and stir. Heat for 1 minute.

Pour 2 cups of vegetable broth. Cover and let simmer on medium heat for 10 minutes. Remove lid and stir in remaining vegetable broth. Cover and continue to simmer for 5 minutes. Remove lid and simmer, stirring for 5-7 minutes until liquid has mostly evaporated and rice is tender. Tasting is recommended!! Let stand for five minutes and serve.

And then sit down to eat. This risotto pairs well with flank steak, a glass of Malbec, playing footsies under the table with your man, holiday centerpieces, a cold winter’s night, and binging on holiday movie marathons.

So Thankful


Thanksgiving pairs well with good friends and family, great smells from the kitchen, dancing around with your momma and sis to Florida Georgia Line pandora while you’re making all the goods, and not taking anything for granted because you know you are so blessed.

I am thankful for great family, good friends, face time when you can’t be together, nourishing food, and knowing that no matter what happens, you have coveted a life with great minded people who lift you up and give you all the love you need.

My mom, sister and I head into New York City every year around Christmas time to winter village hop and eat/drink ourselves silly.

Risotteria’s first for the best gluten free food you’ve ever tasted. Seriously, we haven’t met a meal here we haven’t loved/drooled/made us wish we lived closer.

Follow it up with Gelato down the street at GROM. 100% natural “like it used to be made.” This will also make you wish you lived closer.

And then catch glances at all the glam…

Finally, we get home around midnight full and happy.

I didn’t hit the sheets before I exfoliated with a super easy, everything you can find in the grocery store, scrub for my face.

What you will need:

2 tbsp almond flour

4 tbsp of oat flour

1 tbsp of sea salt

2 drops of lavender oil

To use:

Put half a tablespoon of this mix into your hand and add a couple drops of water. Rub your hands together to make a paste. In circulur motions, gently rub onto your skin. Your skin will feel soft and silky after you wash it off with warm water and then a splash of cold water. Pat dry.

I washed NYC off my face but not from my soul.


Life In The Travel Lane : Boca

I’ll look back on this and smile because it was life and I decided to live it. 

I recently came back from a quick #besties getaway to Boca and I wanted to share all of the adventures. Boca is a wanderful place!


And trying to make my half-up, half-down top knot game ON POINT. #frizzyhairdontcare

Crushing this game called Bocce.


And loving this treat called Mandel Bread. #justcallbestiesGrandmaGiada



And enjoying unlimited mimosas and yummy treats at City Cellar Wine Bar & Grill. P.S. Figs in salad is a game changer.

And spending hours in Restoration Hardware (adult and baby) which I can only describe as a vortex that sucks you in and holds you tight and never wants to let you go. And if you’re anything like us, you stay in for 2 hours, leave, and then come back to buy this stellar faux fur Russan Ushanka hat. Be excited that your besties bought them too and now you can match during real winter activities.


Because eventually we would be heading back to the East Coast where it wasn’t #somewheresunnyand85

DO NOT be surprised if while you’re still in RH you DO see their faux fur slippers at every corner and try them on at every corner in hopes of finding something you hate about them so you don’t think about them when you leave. #fail

Next, stopped in Anthropolgie and fell in love with their candle display game…

And then we VOLUNTARILY stayed to enjoy the faux snow fall that City Place puts on all winter long.

DO NOT be surprised if there is a stage in the center of City Place and they invite kids everyone up on stage to whip and nae nae.


IT WAS A WEEKEND OF… floral crowns, tailgating, and front row lawn seats for Drake White and Zac Brown Band.

DO NOT be surprised if your Kate Spade koozies and floral crowns make you giddy, if you drool over shaved ice from Paradise Cups, and definitely DO NOT be surprised if you realize that getting into the concert right when the gates open with your lawn chairs is the ONLY way to enjoy lawn seats. #gamechanger #amIright #frontrowstatus

While it was a wanderful weekend for us, unfortunately not everyone was sharing the same joy. You never know what is going to happen in life. I am thankful and in awe of those that did and do serve (in any way, shape, or form) to protect and help others in need.


Chances not taken…


I’ve been obsessed with Barre method for almost seven years now! Ever since I walked into the Physique 57 Spring Street location back in 2008 and could BARREly (sorry, barre humor) walk home, I knew I was hooked. I chose not to take a chance on becoming a Pilates teacher this year for several reasons but it doesn’t mean that it isn’t something I dream about for later on in my life. Life is so short and it’s too short to not do what you love. If I look back on my life and I did not become a Pilates teacher and RULE at making great playlists for my Barre classes, I will regret it. And I want to live a no regrets life policy. #barrehairdontcare #goingtomakeithappen
